Spring Roll Bento

Lunch time rewards of time well spent in the kitchen. This is my husband's bento lunch. He is finally willing to take bento to work sometimes as long as it is not in a cutesy little container with bears all over it. I recently ordered him a manly bento box from http://www.allthingsforsale.com/1376-high-quality-microwavable-airtight-2pcs-bento-lunch-boxes-bpa-free.html It is black, silver big and simple. I know he is going to like it once he get's used to the idea. He likes the good food I place inside. The bento box I used for this lunch is from Target. They are out right now for summer picnic fun. I bought this one last year. I do not recommend this box for packing traveling bento. It leaks. I use these to store leftovers from supper for family when the miss dinner with the family. With teenagers working summer jobs they often work a shift during supper and come home at midnight starving. Supper is all put together in the refrigerator. It's a good system.

Kamaboko Bento #22

This bento is filled with Kamaboko slices, edamame, pickled ginger, soy, furatake and white rice. For those unfamiliar Kamaboko is a white fish roll that is purchased in Oriental Markets. The taste is vaguely similiar to imitation crab meat but fishier. Last minute I added sliced lemon wedges to squeeze over top at lunch. I highly recommend the lemon twist.

Boring Bento # 21

Some days lunch is just lunch. Today is one of those days. This bento is last nights supper with edamame tossed in for added nutrition. It's typical school night fare. Barbeque baked chicken breast, steamed white rice, furitake and microwaved edamame. Seems awefully tame compared to some of my October Bentos but that's life in the fast lane. I did toss in a piece of Halloween candy for dessert at the last minute. A Saint I am not! Have a great day.

Two Pumpkins in Paradise Bento #18

My last bento before Halloween and I am pooped. Ran out to a parent meeting at my daughter's school last night only to find out that the meeting is actually in two weeks. I think I'll send my husband to that one. On a bright note since I arrived forty minutes early I did get a chance to read a magazine. This bento is composed of two pork buns on parchment, an edamame pumpkin patch with yam circles, cranberries and cashew smiles. Wishing you a happy day before Halloween.

Lady Bugs in the Garden Bento #13

Lunch today is composed of ham, cheese and whole wheat tortilla rolls. Miniature sweet bell pepper and bonnie bell cheese wedges. The top box is filled with steamed edamame sprinkled with seasalt and sweet bell pepper rings. Another attempt at a low-fat bento in the battle of the bulge. Lots of finger foods should keep my mouth and hands busy.

Rapid Bento #11 Steamed Pork Bun and Onigiri

This bento is composed of a steamed pork bun, edamame, dried apricots, cherry tomatoes, fat-free turkey hot dog skewer and mustard. Although it is not very creative, I think I got most of my colors in and it should be tasty. This bento is for my daughter and I made a twin for myself. I have never tried pork buns before but I have seen them in a lot of cookbooks so I thought I would give it a go. This one was purchased flash frozen and I steamed it in my rice cooker with the bamboo basket. Fifteen minutes from start to finish, not bad. Still no sugar cookies, had to make a mad dash to Micheals to buy an artist canvas for a last minute school project for daughter #2. The project turned out great. I ran out of steam. There's always tomorrow...
