Orange You Hungry

Today's bento is full of color and different foods from the food pyramid helped along by lots of leftovers. Backed chicken breast, steamed white rice, ginger, soy/mirin glazed eggplant, clementine wedges, mixed nuts/dried fruit and mini treat. Wow a feast...

  1. That looks so good! How did you make the eggplant? I love eggplant but have few ways to cook it other than moussaka which is a lot of work...

  2. The eggplant is Japanese eggplant (long and slender). I wash it, slice it into long thin pieces and roast it with whatever is in the oven. I sprinkle the top with mirin, and soy sauce before roasting.
